Recipe: Hearty Lentil Stew

A warming, nutrient-dense stew perfect for any season.

Ingredients

  • 600ml - 750ml water
  • 300g chicken thigh (skinless, boneless, chopped)
  • 100g brown lentils (dry)
  • 200g sweet potatoes (cubed)
  • 200g potatoes (cubed)
  • 100g broccoli (chopped, left for 40mins, then added near the end)
  • 100g cauliflower (chopped, left for 40mins, added near the end)
  • 4 radishes (thinly sliced, added at the start)
  • 15g coriander (chopped)
  • 1 lime, 1 lemon (juiced, added at the end)
  • 2 tsp chilli powder
  • 1 tbsp eevo (added at the end)
  • 1 jalapeno pepper (chopped, added at the start)
  • 5g ginger (diced, added at the start)
  • 1 tbsp cumin (added at the start)
  • 1 clove of garlic (thinly diced, added at the start)
  • 50g shiitake mushrooms (chopped, added at the start)
  • 1 tbsp tumeric (added at the start)
  • 5 twists of pepper (added at the start)
  • 12 baby plum tomatoes (chopped, added 10mins before heat-off)
  • One carrot (chopped, added at the start)
  • Sprinkle of salt at the end

Instructions

1. Boil Water: Start by bringing 600ml to 750ml of water to a boil in your pot.

2. Add Lentils: Add the dry brown lentils to the boiling water.

3. Season: Stir in the spices: cumin, turmeric, chilli powder, and twists of pepper.

4. Add Proteins & Vegetables: Add the chopped chicken thigh, chopped jalapeno, diced ginger, thinly diced garlic, chopped shiitake mushrooms, thinly sliced radishes, chopped carrot, and the cubed potatoes and sweet potatoes.

5. Simmer: Reduce heat and let it simmer until the chicken is cooked through and the potatoes/lentils are soft.

6. Add Soft Veggies: Stir in the chopped baby plum tomatoes about 10 minutes before turning off the heat.

7. The "40-minute" Veggies: Add the broccoli and cauliflower near the end. *Tip: Chop these 40 minutes before cooking to maximize their health benefits.*

8. Finish: Turn off the heat. Stir in the lime juice, lemon juice, extra virgin olive oil (eevo), and sprinkle with salt. Top with fresh coriander.
